We’re all about fresh, furiously flavoursome authentic Japanese food and sushi. Although sushi’s at the heart of what we do, we have a spectacular range of street food, from traditional classics to innovative fusion dishes designed by our Executive Chef and his team.

The one thing all our food has in common is…SHINSEN! It’s Japanese for fresh, and we love it. That’s why we serve all our dishes the day they’re made – with lots prepared right in front of you in our open kitchens, by our expert chefs.
We don’t serve bluefin tuna, ever. That’s because its endangered. We serve only yellowfin and albacore tuna – in fact, all our seafood is sustainably sourced, and approved by Fish2Fork. We’re really proud to say that we have the highest rating with Fish2Fork than any restaurant group with 10 or more restaurants. We believe sustainability is a vital ingredient of good seafood!

We insist on the finest ingredients from our specialist and artisan suppliers. We serve only Yamasa soy sauce – Japan’s favourite soy – and our special vegetarian miso is made in Nagano just for us, by the world’s number one producer, Marukome.
